Picked up my first pellet smoker, the YS 640 model and absolutely love it. I researched the heck out of smokers and came to the conclusion that the build quality of the Yoder will serve my purposes the best. I live up in Edmonton Alberta, Canada and the winters can get a little chilly up here. With the 10 gauge steel build keeping temps up will be a lot easier. Thank you Yoder, looking forward to years of smoking.

Question, just did pork shoulder on my YS 640. Did the usual, smoked till internal temp of 160 degrees, wrapped in aluminum foil till internal temp of 195. Some of the shoulder broke up real nice, while some was hard to pull apart. What would cause some of the meat not to be as tender.
