I ordered my Loaded Wichita this week.
I've been cooking on a vertical Brinkman unit for several years and decided it is time to up my game. I am really looking forward to experimenting with the tips about fire management and letting go of some misconceptions I had about what seemed proper technique in how I have been using and prepping the wood combo's that I like to play with.
My go-to base wood is pecan and I tend to use a lot of fruit woods for accent flavors along with an occasional sprinkling of wine barrel or whiskey barrel chips.
One question I have is do any of you put a water pan in your smoker and, if so are there any tips on doing it without interrupting the flow of heat and smoke into the smoking chamber?
Welcome board! Water pans are not needed in any of the Yoder Smokers cookers.
I have a loaded Wichita and love it!!! Dont use a water pan. Congrats on your purchase.

I get good reviews on my ribs, chicken and salmon, I have only done one brisket but it turned out good, can't wait to see what I can do with a competition grade pit.

Just to put the water pan to rest, clearly folks get good results without one and if it goes against the design I am not going to fix something that's not broke.

Finally over the eight week wait after ordering, heading to Austin to pick up my Loaded Wichita in the morning!
Time to switch from thinking about what I will make on it to cooking, may have to take a day or so off work to play, they will not mind the results when I bring in some fine ribs and brisket.
I took the week off when I got my Yoder. Who could get any work done under those conditions.

First cook this weekend after the run in burn, ribs, kielbasa and turkey breast, what an awesome pit!
My old pit was extremely fussy to get dialed in, this beast is so steady and an absolute pleasure to cook on.
Sure didn't hurt to have temps in the low to mid 70's, absolutely beautiful days to play.
