Today, I wanted to smoke some salmon @ 150 degrees. I cleaned the firebox, then started the smoker specifying the 150 degree temp. I came back about a 1/2 hour later and things were chugging along at 145-150. After I put the salmon on the top rack, I left it alone for about 45 minutes. When I came back to check on things the temp was 452 degrees!

What might I have done wrong here? :?:

Wondering if u read herbs guide to startup? When I smoke jerkey @165 it takes the grill at least an hr to level off. I’m guessing u didn’t let the the grill startup@350?

My thoughts are something else caused the issue? I use 150 a lot and it runs very close once it gets lined out. That can take 1/2 hour or longer sometimes? I'd be curious if you've continued to have this issue cooking at other temps? grease fire?

I rarely bring the yoder up to 350 prior to setting my temp and cooking (I know that's what the manual says - I read it)
