So I've been gifted a whole topside (round roast in the USA I believe) which is about 6kgs and I've been told to work some magic in the Yoder ys640.
To be honest I wouldn't know what to do with it except for maybe mince.
Any suggestions???
Cook it like a brisket. Or cook it a touch longer so you can shred it for sandwiches, tacos, etc.

Injection helps. Wrapping when it gets to the stall and adding some liquid to it would also help.
So I ended up injecting the beef broth as I mentioned. Cranked up the heat to 425f for the first 20 minutes then dropped it down to 260F.
Took just over 3.5 hours to hit a temp of 140F internal then pulled both pieces off then wrapped tightly in foil.
