Hello, I cooked a full packer (11lbs trimmed) usda prime brisket yesterday with Hickory Pellets(BBQ Delight) on my YS640S. It was roughly a 11hr cook- low and slow 8hrs @ 195 then wrapped in foil and bumped the the temp to 250 until probe tender (202-205deg) and rested for 4hrs in cooler. I was really pleased with the finished product; great bark , smoke ring and point/flat very moist. Although, when it came to the taste, it was just off.. Do I need to change something, possibly go with a milder wood. Maybe just being picky and not liking that specific smoke profile.

I’ve had my Yoder for just over 2 weeks and still in experimenting/learning phase but been smoking for a few years on my Komodo Joe.

Any suggestions would be appreciated.
