Hello community, more fresh meat for the grill... :lol:

Super psyched to have a YS640s Comp Cart arriving in a month! This will be my first smoker having previously lived in cities with no outdoor space until now. I always wanted a stick burner, and am still bit gutted not to be getting one, but living in the wildfire tinderbox of California wine country I know I'd be a little freaked out any time I saw an ember fly out of a firebox. ( I'd also be lying if I said the ease and convenience wasn't appealing, :) )

I'm chef by trade and have been obsessed with bbq since I moved to the US 15 years ago, but bbq cooking newbie. Planning to start off doing pork butt the first few cooks until I have a feel for the smoker.

Thanks to everyone, and @Yoder_Herb in particular, for putting so much great info on this forum, it's going to be an amazing resource in my meat smoking adventures. Any advice or critique is welcomed and appreciated.
