Help! Just bought a 640YS smoker and I’m super excited to smoke a turkey for Thanksgiving. But far be it from me to read about it before I bought a 20 pound turkey! Now everything I read says it’s gonna be dry and not good. Please help with how to smoke this huge bird so it’s good. It’s in brine now and I guess it needs to be brined for 24 hours. THEN WHAT? How long and what temp. Any help is appreciated. Thanks in advance. And I promise to be smarter next time.
