Cooking efficiently with the griddle

Hi, recently got myself a YS640S with the cast iron griddle.

I've been trying to make use of the griddle by doing some pancakes, eggs, etc. Recommend temperature for pancakes is around 375F at the surface, I use a laser gun to get the surface temperature. I understand the temperature will not be the same on the whole surface but that's ok.

I'd like to have some advice on the best setup for cooking with the griddle with lid open for cooking pancakes, eggs, bacon, etc. I'd like to be able to have a constant pellet feed to have a constant fire so I can control my surface temperature. I don't want the cooker to compensate for the lid being opened. Is there a way to manually set the pellet feeding speed to achieve this?
