I've been reading and seeing a lot of videos lately about doing briskets hot & fast and wondering if it's possible to try this on the YS 640 smoker? The information I've gleaned so far suggests that one needs to have a ceramic cooker (Big Green Egg/Smoky Joe), a kettle grill/smoker (Weber), or a stick burner, but no one seems to think it can be done with a pellet smoker. I have the two piece diffuser so high heat wouldn't be a problem. I just don't want to spend $70.00+ dollars on a brisket and not have it edible. Thanks in advance everyone for your input.

Yes, anything that can be done on any other smoker can be achieved on the YS640.

I have a Green egg and a YS640...I would never risk another Brisket to my Egg and I have cooked on it for 8+ years. The egg is a crap shoot at best...very hard to control prolonged heat and temperature. I have had varying success with the egg. The YS640 is a dream come true, steady computer controlled temp so you can save and replicate your successful cooking. I have never cooked a brisket on my 640 that was a flop. Brisket quality can be extreme. Buy the best you can. I go low and slow, and paper wrap my briskets...JMHO
