I just got my comp cart and considering it would be tough for me to round up 4 other people to help install it, is the a easier method to install the grill on the cart with little to no assistance from others. Could I use an engine hoist?

The easiest is to get some buddies to help. Yes, you can use a hoist, but you must make sure to hoist it level, so that it will go into the cart correctly, as it is a very tight fit.

I have the help lifting, but my question is, when I take out all the bolts from the standard cart, will the smoker body hit the ground? Should I support it with a transmission jack or something?

You will just remove the top bolt on each corner. If you look under your current cart, you will see that the top bolts are what hold the cooker to the base.
