I was wondering if anyone had tried making a pellet grill heat diffuser out of stainless steel or if anyone had any thoughts on grilling performance given that stainless conducts heat 1/4 as well as carbon steel. After about 4 years of use my 2 piece diffuser has rusted through and I'm in need of a new one. I have free access to stainless steel so I thought that might be a good idea, as long as it doesn't have a negative effect on grilling performance.
