just got the yoder initial burn-in complete and planning to do a few spatchcock chickens for dinner. do you always use the diffuser or do them without (more like direct vs indirect)? top rack or bottom? 350 to get crispy skin?

appreciate helping the rookies! :D

You'll be using it as a smoker at 350f. So yes, leave the diffuser in. Bottom rack. If you wanted top rack at 350 you'd need to bump temp up to 375+.
