Hello from NJ

Hey guys,

I just recently picked up a YS640 unit as the second owner. I took it out for a maiden voyage this week with a few T Bones. The direct grill option worked great! Beautiful sear marks and the steaks were damn tasty, even the inlaws agreed! Yesterday, I fired it up again and did some chicken drumsticks and a whole chicken. I think I mad some rookie mistakes since I had some serious temperature sways. When I checked the smoker this morning after some serious reading last night, I realized that the chimey was not flush, it was way too far in. I also made the mistake of having the smoker setup to use H3 not H1 which I think threw off my temps. The whole chicken took too long in my opinion, over 3+ hours. I also made the rookie mistakes of increasing and decreasing the set temps during the cook which probably messed up the controller. I had the drumsticks and the chicken in aluminum cooking pans which wasn't terrible but I feel like cooking directly on the grates would have been better. Definitely learned a lot though. I have been smoking for about 5+ years using a Weber Smokey Mountain unit so this is definitely different from what I'm used to but we'll get there.

Welcome to the forum, and thanks for joining the group! I agree that constantly changing the controller will lead to some temp issues. It's very tempting to do when you are learning the cooker, but if you just set the temp you want and walk away, you can trust the Yoder to get the job done.
