Hello, just received my new Yoder YS 640 Competition Cart Pellet Smoker. Can't wait to try it out this coming weekend.
I've been cooking on a stick burner for the past several years and had some quick questions.
I always placed a dish of water in my stick burner to keep the heat moist and help to prevent the meat from drying out. Is this needed/recommended in the pellet smoker?
Is it best to remove the meat from the smoker before spraying with apple juice? Looks like the Yoder could be a little harder to clean out then my basic wood burner smoker was.
Are there links on this site (or others) that show the average time it takes to cook various products on the Yoder YS 640? I know that ABS (American Barbeque Systems) have an entire section dedicated to cooking capacities and cooking times for their smokers. Not that I'm an ABS fan, just sayin'.

Welcome to the forum, and thanks for joining the group! Don't use water it the cooker, it's not needed. I'm also not a fan of spraying food while its cooking. I never do it and my food is always plenty moist. However, if you feel the desire to do so, it's fine to leave in the cooker. Apple juice will just dissolve off of the deflector right away anyway. Cook times are pretty much the same as any cooker with a given meat at a given temp, but always cook by tenderness, not time or temp.
