Hi folks - I am new to doing my own BBQ on smokers, but think the 640s will be a pretty forgiving platform for learning.

I did a rack of spare ribs last weekend using the Aaron Franklin recipe. I thought the ribs were overdone, and lost most of the bark from being wrapped for last 3 hours. I'll play around with some things next time. I have a pork shoulder planned for next few days.

I moved here from Houston late last last year to Central Texas BBQ is what I am used to (thus the Franklin recipe). But only keen to try meats in the style of other regions.

I'm looking forward to learning from folks that have so much experience with these smokers !!!

Thanks,

Is registering your cooker a futile exercise or does it really provide any tangible benefits? Are there any hidden advantages or perks that come with cooker registration that are often overlooked?
