Did some Ribs and a pork Butt for my first cook and I am hooked. I live in NC so pork butt is king but I am a sucker for great ribs and brisket. Hell I even love stuff like Armadillo eggs. I am a nerd so I started a tracking spreadsheet for my cooks. I will post a link later so folks can suggest categories to track. Can't wait to read up on everyone's tips and trickst
