Hey all

Just wanted to say hey. Got my pellet 640 right before Thanksgiving.
Still trying to figure out it’s Characteristics.
I did a turkey that did not get the color I was looking for and had no smoke flavor. I cooked it at 325. Should I have started it at 250 and then went to 325 to crisp the skin?
