Purchased, assembled, and burned in a YS 640 yesterday. Have 2 piece diffuser. If I want to indirectly cook some chicken breast and a ribeye, then sear it off, how should it be set up? Diffuser open to sear....what temp and time to cook indirectly? Any input appreciated!

Use the diffuser as one piece. Then take the plate off and crank the temps to max. Time to cook? Dunno, it's really hot. Give it a test. I use the grill grates upside down for steak now, leave the right side with normal grate, warm meat to temp. Then take meat off for a bit, remove the square plate and put the grill grate on, then crank the heat, let warm 5 min or so, then cook.

Try opening the plate at night, pretty amazing flame!

I haven't moved my back and forth plate at all in 3 years. Leave it at 5-6" out and leave it there.
