Hello Folks, I've been a long time lurker - reading threads to learn as much as possible.... Some good thread gems in here!

I have a YS640 on Comp Cart, and use it at least once a week, and up to 3 or 4 when time permits. It's a great cooker which I'm still learning the finer points of. One of the best things I've learnt is not to worry to much about exact temps and fluctuations... as long as it's generally stable and not flying around to much - everything will work out fine , and the food will be awesome. I do wish it had a slightly stronger smoke profile at times, but there mare ways and me as of dealing with that.

I also love Chef Toms videos and watch every week. He's a great cook, and I share his videos regularly with my friends. Cheers Tom!
