Hi, everyone -

Am a newbie with a pretty clean YS640 (with competition cart so I can wheel to friends :)) that I am working hard to make dirty. In fact, have a brisket flat in now and following Chef Tom's competition brisket recipe. We're about 6 hours from tearing into this.

We have some good friends that are vegan (they are from Europe which probably has something to do with it) and we want them to enjoy the smoker, as well.

Are there any good recipes, techniques, or tips for smoking or grilling veggies?

New to the forum and searched for vegetable posts and didn't find any. If it already exists, apologies - chalk it up to operator error.

I should mention that I have all the goodies: two piece heat diffuser, grill grates, etc.
