Hi All -

New Yoder YS640S owner here, purchased about a week ago. This is my first pellet smoker / grill, previously extensive experience with a water smoker and kettle. Today I decided to try cooking chicken direct / indirect (same as I would on a kettle) using the heat diffuser with access door, access door removed, 3 grill grates on the left side of the cooker. Concerns started at heat-up. I have read other posts about overshooting the set temp by 50 to 100 degrees or so, however mine overshot by 240 before it started to come down (set to 350, peak hit 592). At 592 it started to go into cooling mode, hit about 355 and then again shot up to 390. This was all before I put any food on the grill. This fluctuation seemed to continue throughout the cook period. Is this experience just because of the diffuser with access door? Pellets are lumberjack hickory. Damper fully open.
