This is beginning to become a problem for me... inconsistent temps are becoming to destroy my cooks.

I do a test and set the yoder to 240 look and the temps going up and down. The yoder reads 255 but the probe reads 225 what is going on?

Heat isn't the same on the second level on the Yoder. Heat is made UNDER the diffuser. It's not a stick smoker, get used to it.

In my 3+ years, my grate temp about 1" above grate is close to the setting. When I do ribs etc I set my temp 15 more than a 225 grate temp. The upper rack like 99% of smoker will be cooler... Umm the smoke/air is cooler.

When I do 9 rack of baby backs I rotate every 1/2 hour. The lower right and upper right are hotter, the upper right is lower temp than the lower right.

Not sure of your background in smoking meat, but that's how the Yoder works. 6 BB ribs on the lower rack need left/right rotated, and flipped about 2 hours in to the top side of the meat. Or you can cook them all on the top rack, and do the L/R shift every hour.

You'll get used to it. It's not an Easy Bake oven. It's not magic.

Here is the yoder with the probe on the grate.... yoder says 235 when the temp is 240 set to, my temp on probe says 225

I'm losing the idea that this is even worth it. I knew something was off when it took me 25 hours to do a 9lb flat


Now it's all starting to make sense something is wrong

Well if you need 225 and need to set the smoker to 240, then set it to 240. I also up the temps a bit over what the controller says. The smoker seems to do better after a few months with temp. Maybe the controller learns, dunno.

I got it figured out.

Ohh on the last picture, it shows a spike and a drop off. Dunno why it does that, please explain?
