How do you keep the pit cool during the summer? I know most people usually wait until the winter because of temp.

Thanks. I was planning to leave the fan running in the pit, but these 90+ degree days seem like the cheese may not survive. I just need to give it a go.

Smoking cheese is one of my favorite things to do. The ice trick works great along with smoking late at night or early morning.

Temps are dropping enough here in Boston area that I can start smoking cheese again easily without worrying about it... psyched!

Just curious: How long do you normally cold smoke your cheese?

I just did a batch a few nights ago when it got into the 40's. Filled an 18" A Maze N tube and let her go all night with the fans running. I will find out the results in a few weeks because the cheese is sealed and mellowing.

I smoked some butter too. We will see how that turns out.

I have the same setup and am looking forward to doing the same thing, except butter, though that's very intriguing! Will be excited to hear how it turns out! I make a grilled oyster w/ herb butter and romano cheese and chipotle hot sauce that would just SCREAM for some smoked butter...

How about smoked ice cubes? Think about that in a Bloody Mary.

We smoke for 4 HRS ,tight wrap for 7 days .And it Disappears in 1 day . LOL

I have done it by putting ice cubes on a grilling tray on the top shelf with a catch pan underneath, and with just a large pan of water. Couldn't really tell a difference. You could probably get the same effect by putting a drop of liquid smoke in each cube in a tray. I won't be doing it again. Been there, done that, got the t-shirt.

how do you run just the fans? turn the switch on without pressing start and just leave it for hours? Thats ok?

When you turn the unit's toggle switch to "on" the fan will start. It won't start heating up and burning pellets until you hit "start." If you haven't seen it already, you might consider reading Herb's suggestion on another post where he describes a great process for cold smoking without the fan running. Its going to be a month or more before I can smoke some cheese here in Mesa,AZ.
Even with ice in the cooker.

Don`t think it`s a problem running just fans ,we like the cleaner smoke u get with fans .
