Sorry a bit of noobie. What are the pans for. Also what temp do you cold smoke at? I have a yoder 1500 and want to cold smoke. Is there anything I need to get to do this?

The pans below are filled with ice to keep the cooker cool. In my YS1500 I use a smoker tube, run the fans to move air but never start the cooker and it makes some awesome smoked cheese. I usually try to do quite a bit during the winter so I don't have to worry about the cheese getting too warm and sweating or melting. I smoke a good sized batch and vacuum seal and freeze the blocks. It's works great for me.

I have a 18" smoke tube, so I just go until it runs out, about 5-6 hours or so. Some people might want more smoke, but we are happy with the end product and any blocks I've given to friends get rave reviews, so I'll just stick with what works. Make sure to vacuum seal the cheese and wait at least two weeks before you eat it. It will mellow the flavor and make it more smooth.
