Made this for the first time and turned out really good! 4 hour dry brine, 4 cups d.b. sugar, 1/2 cup salt, 1tbspn pepper. Rinse set for 2 hours. smoked at 210 for 2 hours (hit about 165 IT). Still moist on thickest slices....great flavor. love my yoder!!!
My sister-in-law got to see it in action for the first time and her comment was "wow...that's impressive"
