Christmas Prime Rib Roast

Christmas Dinner. 8 lb. Prime Rib Roast. Virgin Olive Oil and McCormick's Montreal Steak Seasoning 24 hours prior to cooking. Set at room temperature for 3 hours then into the YS640 at 205 degrees until an internal temperature of 125 degrees, then sat for 30 minutes prior to carving. It was delicious.
