Decided to do something different and make some lamp chops.

Made a paste with herbs and rubbed the lamb, then smoked it at 225 till internal temp was 120. I then rested them cut them into individual chops and grilled them till med.

I am not a fan of lamb but these come out so good.

They do look great! My family digs lamb chops in a major way. Normally grill them over high, direct heat, but will definitely give smoking a try one of these days! Thanks!

You can get the herb rub from BIG Bob Gibson BBQ book. It's really good.
