I had to cook 7 butts yesterday for a wedding so I bought a case and cooked an 8th one for myself. Here they are ready to go in the cooker.

Unfortunately, I was in a hurry to get them pulled for the wedding so I didn't get any finished product photos but, now I have a butt for myself that I needed to do something with. So tonight I decided to take some of that leftover pulled pork and make some Thai Red Curry Pork for dinner. I decided to forgo any veggies and just did the curry pork over rice. It was quite tasty. So, if you ever have some pork left that you don't know what to do with, give it a try.

Great cook and the dish you made looks fantastic! Left over pulled pork is pretty versatile. I like to make taco's or quesadilla's.

+1 and ditto on the tacos/quesadillas. I usually crisp it up in a cast iron pan with a little lard (if I have it) or oil. Gets it pretty darned close to carnitas.

So you have any pictures of all the butts on the smoker? What you using for a smoker to fit almost 80lbs of meat on? How did it go over at the wedding? Everyone wanted 2nds I am sure?

I used some of my left over pulled pork for soft tacos. Guac, sour cream, salsa, and siracha. So damn tasty.

I have an excellent recipe for Brunswick Stew using leftover Pork Butt and Chicken if you or anyone would like it then pm me
