got some fairly big chook breasts (3 bigguns) sliced longways strips about 3/4" wide all the way thru the breasts,,, brining in Mad Hunky poultry brine now...
figured I'd half some of um so they aren't too long...
after drying and dusting some with Mad Hunky GP an some with the Hot Wang,,, bacon wrap um with a thin long slice of onion or two ...
if I had any peppers I'd prolly be makin Kabobs...

rain slowed up some an the Durango never missed a beat...
this thing it like the Honey Badger of cookers,,,
it just dont give a...
temps only dropped slightly and just kept a chuggin away...

will make a coule changes next time such as slightly bigger pieces an will add some brown sugar to brine as the bacon threw the salt factor up some...
so will compensate...

if I were doing it again I would cut the pieces slightly bigger and sugar the brine some
as the bacon adds lots of salt to the flavor profile...
gotta love the Mad Hunky brine,,, it bullet proofs chicken...
and note to those who dont know,,,
both chicken and bacon take smoke very readily
so if you dont like strong smoke one needs to perhaps tent the cook after a time...
although I never have...

just trying to get some Yoder Durango 24 info on the web,,,
there was not much available when I was making my choice...

You should try the Oak Ridge BBQ Game Changer Brine and kick your chicken up even further, and also check out their Death Dust too. Their brine has no phosphates or other chemicals and is all natural. Awesome stuff. Many more options out their to try and take your chicken to a place it has never been before.

Oakridge Game Changer and Habanero Death Dust are amazing. The absolute best wings I make are with HDD and Game Changer does wonderful stuff. Any Oakridge product is good stuff.

I gave nearly two pounds of MH Hot Whang to a friend because it just sat in my cabinet for over a year and clumped up because I was using HDD instead.

Love the bacon wrapped chicken bites. Sometimes we slip a piece of jalapeno in there too.

Re, OakRidge, those are really solid endorsements! I know a lot of folks who swear by MH products, so I'm heading directly to OakRidge's site now to buy some of their stuff! How's the Dominator on ribs? Anyone tried it? I like Dizzy Dust for ribs myself but haven't experimented too far from that. I love hot stuff--hotter the better--but my family doesn't always like it like I do so, particularly for the ribs, I need a rub that isn't too jacked up.

I love dominator on ribs and it's done well in competition too. Good flavor and amazing color.
