Awesome! Bet the crust from the cast iron pan just makes it even that much more special! +1 on Herb's suggestion for a recipe. Wondering if you used whole dried chipotles, or ground or a chipotle hot sauce or some combo? My mouth is watering just thinking about it... For a healthier alternative, consider doing it with sweet potatoes too. We have started doing scalloped sweet potatoes every year at Thanksgiving and they've now become a staple.

It's chipotles in adobo sauce.
