New gril a couple question

Ok all I'm so excited got my new 640 home !!!
First thing I noticed when I did the initial burn is the temp gauge is off from the digital readout
I left it at 350 on digital and the temp gauge only read 300-320. I had to run digital up to 375 to maintain 350 degrees. Is there a fix to this?
Second I got a extra diffuser pan with a removal lid on one end. How or what is the best or proper way to use this?
Thanks can't wait to smoke tomorrow

I will assume that you have either a YS480 or YS640. The Yoder pellet cookers cook from the bottom up, and as such, the gauges will never match the display because of their position high on the top of the cooker body, away from the heat source. Do not use them as your definitive, use the display, as this is the temperature at the physical lower grate.
