I am ordering my new unit in a bit, one or two probe ports? Curious to hear opinions.

One is fine, you can fit two probe wires through it easy enough.

It depends on how may probes you want to run into the cooker. If you are like me, you don't need any. If you have one of the 4 port digital thermometers, you need 2 probe ports to accommodate them.
