Hello all. A new guy question here. Received my YS640 a couple weeks back. I had a probe port installed so I can run a Maverick 733. The couple cooks I've down thus far I've used both thermometer probes: one for grate temp and one in the meat. The probe port has an insert. A white plastic-looking piece with a black gasket membrane on the end. This insert is held in place by the threaded end cap. Am I supposed to remove the insert when running the temp probes into the cooker or pierce them through the gasket?

You can run the probes through the insert, then tighten the cap to seal around the wires, or, you can remove the insert if you desire. If you remove the insert, don't lose it, as they are not available separately.
