Just wondering how much do yall open your door on your smoker when smoking. I'm taking about the door on the plate with the handle on it. In the floor

It all depends on the side to side temperatures, and what is in the cooker. Anywhere from fully closed to 2" open.

I typically keep mine fully closed unless I'm trying to speed up a cook the last hour. If I do that, same as what Yoder_Herb said, about 2 inches.

If I'm crisping chicken or chicken wings, I'll open it about half way for the last 20 minutes of a cook.
