What to do

Something not right I cooked a 12 lbs Brisket I had the controller set @ 240 & cooking on top rack .temp was running @ 225 it did that for about 11 hrs then it started to drop down to 200 so I had to keep turning it up I did that for 4 hrs I was up to 310 on the controller so I shut it off I had black smug all over the meat.I did start off with a clean out fire pot & I was using lumberjack pellets. Today I cleaned everything up & fired the grill up to see if the fans was working & they are. The meat was like I was making beef turkey

If I had to guess, it's bad pellet fuel.

I'm going try it with some different pellets I have 4 or5 bags delight pellets I'll try them See what happens
