I entered a local grill/bbq competition hosted by a local bbq supply store. I will be competing with my YS640.

The rules are standard kcbs rules. The meats will be ribs, chicken, and ribeye

From the site of the host:

We will have 3 turn in times.
--1:00 PM Chicken (BACKYARD ONLY)
--1:30 PM Ribs (BACKYARD ONLY)
-- 2:00 PM Steak / Ribeye (OPEN TO ANYONE - JUST ADDED)

This is a "Backyard BBQ" competition so amateurs only - no pros.

I have done a couple test runs already and plan to do another one this weekend.

Considering the rules and turn in times, any suggestions as to methods and timing? Any advice anyone could give this rookie would be greatly appreciated.
