New to this forum thing and to pellet smoking but did my second cook on my brand new ys 640 this past weekend and really impressed. Temps out side here in NY were about 35-40f so I decided to start up the Yoder and let it come up to 350 to assist with the recovery after opening chamber and loading food, after loading it up I closed the lid and set it to 250 and it very quickly stabilized. Used LJ 100% hickory for fuel and set the damper to 8” in and only used about 10lbs of pellets, total cook time was 5 hrs. Beef cheeks top shelf ribs bottom shelf
