Last brisket I cooked I had the damper open all the way, I monitored grate temps and the grill cooked evenly with only 5-6 degree difference at times

I have one on there now and no mater how far in I keep moving the damper my temp is differentiating 25-40 degrees! The right side of the grill is running way hotter

The only difference is the pellets are hickory and not cherry/pecan mix


Any ideas? I have 10 people coming over for dinner and do not want to mess this one up!

Pull the damper all the way to the right and back in a few inches.

Not knowing how you are reading temperatures, it is hard to comment. All temperature probes must be a minimum of 6" away from anything in the cooker.

I have thermoworks grate clips and probes along with a thermoworks monitor

They were not 6" away from the meat, I will move them and see what happens
