Hello Yoder Smokers out there that use a 2- piece diffuser.

I have a question when using the 2 piece diffuser.

Will grease or fat fall through the removable diffuser lib or will it all channel down the pan? If so, what is the solution to have all the grease and fat channel down drip pan?

I just ran two pork shoulders with my two piece diffuser (no foil). When I took the "door" off to clean the firebox, there was just a small amount of grease on the underside of the door that scraped off easily. I did have my smoker a little off level due to the slope of my driveway. Didn't see any residual that had made it down to the bottom of the 640 or any "clumped pellets" because of it. 15 hr smoke with one shoulder directly above the door.

Are you talking the one that you can buy with the 10' door? Or the one being shipped with the new smokers? i.e. not the old style one piece?

Just curious.

Foil works fine for me just roll it up and toss it. Really makes a diff when you do 7 pork butts. It drains just fine into the bucket.

Not sure if you are asking me Conumdrum, but I will answer. I am referencing the add-on two-piece with the 10" square door. I also have the newer one piece (640 is only a few months old). I found that the temp fluctuated a little too much for my liking with the foil in place. Without it the smoker seems to run within 5-9 degrees of my set temp.

That's great! Your smoker is right on track then. I have the 10" door one and I like it. You also have a different temp probe location and software version, mine will be 3 years old soon.

What are the the temp variations with foil and how are you measuring the temps? Curious

I got more of a 15-20 degree swing when I foiled (granted the first time was probably attributed to me messing with the positioning of the slide damper). I use one of the tappecue probes slide in the chamber mount from my maverick.

So haven't tried again with foil then since the first time. Okay.

Sorry for the vagueness Condumdrum. I have cooked three additional times with foil and found the swings were a little more than what I read about here. One of Herbs sticky's in the forum mentioned that foil could be a problem, so I sacrificed cleaning for steady temps in my opinion. I look at it more like seasoning my diffuser...... :)

I am okay with small temp fluctuations for the easy of foil clean up. I swing 10-15* +or-. This is my favorite part about the Yoders. There are so many ways to do it and you can customize these how ever YOU like.
