I set the temp to 250 degrees. While coming to temp I prepare the meat to be smoked. When I return and the temp is correct, i open and put the meat on the rack. The temp obviously goes down a little to 225. It never recovers back to the set temp. Any ideas why.

I'd suggest letting the smoker warm up to the preset 350º and then turning down to 250º when you are ready to add your meat. You'll lose temp while the lids open and your adding the meat.
