What is everyone shooting for/happy with on temperature variance, and I don't mean from one end to the other, or grate to top, but what I mean is, say you're shooting for a cook temp of 250, hat variance would you be okay with from the 250? 240/260? 225/275? Just curious how obsessed is typical.

225-275 for 250. 320-380 for 350. It will change throughout the cook. My 640 runs at 225 average (Grate temp) when I set mine at 235. So that's what I do.
